Chicken Salsa Soup is a wholesome and nourishing dish, perfect for a light meal or a comforting starter. Made with tender chicken, fresh vegetables, and a rich homemade stock, this soup is both healthy and flavorful. The combination of beetroot, cabbage, carrot, and potatoes gives it a vibrant color and a mildly sweet, earthy taste.

Ingredients

4 cups water

Chicken (as required)

1 cabbage

5 large potatoes

1 large carrot

1 beetroot

1 onion

1 bay leaf

2 tablespoons tomato paste

1 clove garlic

Butter (for frying)

Method

First, prepare the chicken stock by boiling the chicken in water. While making the stock, make sure to separate the meat from the bones. Once the stock starts boiling, add the diced potatoes and let them cook until soft.

Next, add the beetroot cut into medium-sized cubes along with the bay leaf. Let it simmer.

Meanwhile, chop the carrot into small pieces and lightly fry it in butter. Similarly, slice the onion and sauté it until lightly golden. Add the garlic and tomato paste to this mixture and fry well.

Now add the finely chopped cabbage and stir everything together. Transfer this entire mixture into the pot with the chicken stock and potatoes. Cover the pot and let it boil for a few more minutes.

Your delicious Chicken Salsa Soup is now ready to serve hot.
