Cabbage and Chicken Soup is a wholesome and comforting dish, perfect for a light meal or a warm starter on a cool day. Made with simple ingredients like fresh cabbage, chicken stock, and vegetables, this soup is both nutritious and easy to prepare. The slow cooking process allows the flavors to blend beautifully, resulting in a rich and soothing soup.

Ingredients

Butter – 3 tablespoons

Cabbage – 2 cups, finely chopped

Chicken stock – 6 cups

Tomato paste – 1 tablespoon

Carrot – 1, chopped

Onion – 1, chopped

Garlic – 1 clove, minced

Chicken pieces – a few (as required)

Method

Heat the butter in a large pot over medium heat. Add the chopped cabbage and sauté for about 10 minutes, stirring occasionally. Then add the tomato paste and cover the pot. Let it cook for about 30 minutes on low to medium heat.

In a separate small frying pan, melt a little butter and sauté the carrot, onion, and garlic for about 10 minutes until soft. Add this mixture to the cabbage and cook for another 10 minutes on low heat.

Now pour in the chicken stock and add a few pieces of chicken. Let the soup simmer for about 10 minutes. Remove from heat and serve hot.

This comforting cabbage and chicken soup is best enjoyed fresh, especially during chilly evenings.
