Pyongyang Naengmyeon noodles is a traditional North Korean dish, most famously associated with Pyongyang, the country’s capital. This refreshing delicacy features thin, chewy buckwheat noodles served in a chilled, delicately flavored beef broth. It is especially popular in the summer months for its cooling and light qualities but is enjoyed year-round as a symbol of elegance and simplicity in Korean cuisine. Unlike the spicy Hamheung-style naengmyeon, Pyongyang Naengmyeon is known for its subtle, clear broth and natural flavors rather than heavy seasoning.


Ingredients

Noodles:

  • Buckwheat noodles (made from pure buckwheat or a mix of buckwheat and potato starch)

Broth:

  • Lean beef brisket or rump steak
  • Water
  • Optional aromatics: Korean radish, onion, garlic, ginger, scallions, peppercorns, soy sauce

Pickled Radish:

  • Daikon radish
  • Salt, sugar, vinegar, Korean chili flakes (optional), and a touch of sweetness

Toppings:

  • Sliced boiled beef (from the broth)
  • Hard-boiled egg
  • Cucumber, julienned
  • Korean pear, thinly sliced
  • Sesame seeds
  • Mustard paste
  • Vinegar

Preparation

1. Prepare the Broth

Simmer beef brisket or rump steak in water with aromatics until the broth is rich yet delicate, usually about an hour. Skim any fat and strain the broth for clarity. Chill the broth thoroughly—overnight if possible—to ensure it is cold and refreshing.

2. Pickle the Radish

Peel and thinly slice the daikon radish. Salt the slices and let them sit for about 30 minutes, then rinse and squeeze out excess moisture. Marinate in vinegar, sugar, and chili flakes for a tangy, slightly spicy flavor. Refrigerate for at least a day for the best taste.

3. Cook the Noodles

Boil the buckwheat noodles according to package instructions. Rinse them under ice-cold water until firm and chewy, then neatly arrange them into a small mound for serving.

4. Assemble the Dish

Place the cold noodles in a deep bowl. Pour the chilled beef broth over them, then top with slices of beef, pickled radish, cucumber, pear, and half a hard-boiled egg. Sprinkle with sesame seeds and serve with mustard paste and vinegar on the side for added flavor.

5. Serve

Pyongyang Naengmyeon is traditionally enjoyed cold, with diners adding extra vinegar or mustard to taste. The dish is celebrated for its understated elegance, earthy buckwheat noodles, and refreshing broth, offering a unique culinary experience distinct from the bolder flavors of other Korean dishes.
