Dakgalbi  is a popular Korean dish originating from Chuncheon in Gangwon Province. It literally means "spicy stir-fried chicken" and is known for its bold, savory, and slightly sweet flavors. Dakgalbi is typically cooked on a large hot plate at the table, making it a communal, interactive meal that's especially popular among students and young adults. The dish features bite-sized chicken pieces marinated in a spicy gochujang (Korean red chili paste) sauce, stir-fried with vegetables, rice cakes, and sometimes noodles or cheese.


Ingredients

For the marinade:

  • 500g boneless chicken thighs or breast, cut into bite-sized pieces
  • 2 tbsp gochujang (Korean red chili paste)
  • 1 tbsp gochugaru (Korean red chili flakes)
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice wine (mirin or soju can be used)
  • 1 tbsp sugar or honey
  • 1 tbsp minced garlic
  • 1 tsp grated ginger
  • Pepper to taste

Vegetables and extras:

  • 1 cup cabbage, chopped
  • 1 small sweet potato, thinly sliced
  • ½ onion, sliced
  • 1 carrot, julienned
  • 1 cup Korean rice cakes (tteokbokki tteok), soaked if hard
  • 1 green onion, chopped
  • 1 tbsp sesame seeds (for garnish)
  • 1 cup cooked rice or instant ramen noodles (optional)
  • Mozzarella cheese (optional, for topping)


How to Prepare (Step-by-step)

1. Marinate the Chicken

  • In a large bowl, combine all the marinade ingredients.
  • Add the chicken pieces and mix well to coat.
  • Cover and refrigerate for at least 30 minutes (1–2 hours for better flavor).

2. Prepare the Vegetables and Add-ons

  • While the chicken marinates, wash and cut all vegetables.
  • Soak the rice cakes in warm water if they’re refrigerated or frozen.

3. Cook Everything Together

  • Heat a large non-stick skillet or grill pan over medium-high heat.
  • Add a bit of oil, then place the marinated chicken in the pan.
  • Add the vegetables and rice cakes around the chicken.
  • Stir-fry everything together, mixing well so the sauce coats all ingredients.
  • Cook for about 10–15 minutes, stirring occasionally until the chicken is fully cooked and vegetables are tender.
  • Optional: Add cooked rice or ramen noodles toward the end, stir-frying everything together.
  • Optional: Sprinkle shredded cheese on top, cover, and let melt before serving.

4. Garnish and Serve

  • Sprinkle with chopped green onion and sesame seeds before serving.
  • Serve hot, directly from the pan if possible, for the authentic table-top experience.


Serving Tips

  • Best enjoyed with lettuce wraps (ssam), kimchi, or pickled radish on the side.
  • Pair with a cold Korean drink or makgeolli (rice wine) for a full Korean dining experience.
