A rich, moist and indulgent dessert, Coffee Walnut Cake is perfect for coffee lovers. The deep aroma of coffee blends beautifully with crunchy walnuts and smooth milk chocolate, making this cake an ideal choice for evening tea, special occasions, or festive gatherings. Simple to prepare and full of flavour, this homemade cake is sure to impress.

Ingredients:

1½ cups milk

50 g butter

6 tablespoons instant coffee powder

½ cup sugar

1 cup all-purpose flour

1 tablespoon cocoa powder

1 teaspoon baking powder

½ teaspoon baking soda

½ cup milk chocolate

½ cup chopped walnuts

Method: First, mix 2 tablespoons of coffee powder with ½ cup milk and keep it aside. In a large bowl, beat the butter and sugar together until light and creamy. Add the coffee-mixed milk to this mixture and whisk well until combined.

In another bowl, mix all the dry ingredients—flour, cocoa powder, baking powder, baking soda and the remaining coffee powder. Sieve the dry ingredients and gradually fold them into the butter and sugar mixture. Add the chopped walnuts and mix gently to form a smooth batter.

Preheat the oven to 180°C. Pour the batter into a greased cake tin and bake for about 40 minutes or until a skewer inserted into the centre comes out clean. Remove the cake from the oven and allow it to cool completely.

Melt the milk chocolate in the oven or using a double boiler. Separately, whisk 4 tablespoons of coffee with 1 tablespoon of coffee powder and a little water to make a smooth coffee glaze. Spread the coffee and melted chocolate glaze evenly over the cake. Finally, sprinkle some coffee powder on top using a sieve.
