Mutton soup is one of the most satisfying dishes to savour during the colder months. Rich, flavourful and deeply nourishing, it combines tender pieces of goat meat with vegetables and aromatic spices. This simple recipe brings out the natural taste of the meat while creating a wholesome, warming broth perfect for winter evenings.


Ingredients

  • Mutton (goat meat): 400–500 g
  • Meat stock: 5 cups
  • Onion, finely chopped: 1
  • Potatoes, cut into chunks: 2
  • Carrot: 1
  • Ginger, julienned: as needed
  • Black pepper powder: 1 teaspoon
  • Salt: to taste
  • Lemon juice: 1 teaspoon
  • Butter or oil: 2–3 tablespoons

Method

1. Prepare the Meat
Boil the mutton thoroughly until tender. Separate and keep the stock aside for the soup.

2. Sauté the Aromatics
Heat butter or oil in a pan. Add the chopped onion and sauté lightly until softened and aromatic.

3. Combine Meat and Vegetables
Add the boiled mutton to the sautéed onions and cook on low heat for a few minutes.
Next, add the potatoes, carrot, and ginger one by one.

4. Make the Soup Base
Pour in the reserved meat stock, add salt and black pepper to taste, and let the mixture simmer on low heat for about 20 minutes, allowing the flavours to blend and the vegetables to soften.

5. Finish and Serve
Before removing from heat, add lemon juice. You may also add a little butter and some parsley for extra flavour and aroma.
Serve the mutton soup hot. Toasted bread makes a perfect accompaniment.
